Peanut Butter Pitaya Power Bowl

Hope you had a great weekend! I had some extra time on my hands so I am finally getting around to posting my much-anticipated smoothie bowl recipe promised in my last article, Pitaya Picks – “Top 3 Places in Houston To Pick up a Pitaya Bowl”

Before I start listing ingredients. I want to remind you all that the average smoothie bowl is  around $9 bucks with tax! Crazy expensive right? Honestly, not really. Pitaya is an expensive fruit because it is imported so in order to make a profit – retailers have to sell it for a pretty penny to make a profit. Luckily, WE don’t have to worry about that.

The ingredients for my smoothie bowl recipe cost $25.36 with all the bells and whistles! This is including granola and 3 types of fruit for the topping! Please take into consideration that you would most likely have at least 2 of these ingredients stocked in your pantry already – PB, granola, and/or coconut water probably. Using 3 oz of pitaya for each bowl – you can make 4 smoothie bowls for just $6.34 each!

  • 12 oz Pitaya Plus Cubes – $6.49
  • 16 oz Bag of Frozen Pineapple – $2.38
  • 16 oz Bag of Frozen Blueberries – $3.48
  • 1 Pint of Strawberries – $1.98
  • 1 Pint of Blackberries – $1.98
  • Bananas – .49 cents
  • 1 Box of Vanilla Flax Almond Granola – $3.00
  • 1 Box of Central Market Coconut Water w/ Passion Fruit – $2.98
  • 1 Jar of Skippy All Natural Peanut Butter -2.58

 

Pitaya Plus Cubes are not the easiest to find, I can only find them at my local Randall’s or Whole Foods. If you can’t find Pitaya, you can substitute Acai. The taste only differs slightly and they are both packed with antioxidants!

One more thing before I get to the recipe. I don’t have a great blender. I’ve been wanting a Ninja Blender for a while now. A professional blender is more idea for making a smoothie bowl since most of the ingredients are frozen. To achieve the consistency, something like fro-yo, the blender needs to be powerful. But it is not impossible with a cheap blender like I have.

The trick is to let the  fruit thaw out for about 10-15 minutes in the blender before you blend it! Also, try to make sure your fruit is in the smallest pieces they can be. If they’re frozen together – break them up! Lastly, if its just absolutely not  blending, add small amounts of liquid until you can get it to the consistency you want.

Peanut-Butter Pitaya Bowl Recipe

Servings: 1 Bowl                      

Ingredients

Pitaya Bowl Base

  • ½ cup frozen pitaya cubes (Do not pack cup)
  • ½ cup frozen pineapple chunks
  • ½ cup frozen banana
  • ¼ cup frozen blueberries
  • 1 Tbsp peanut butter
  • 3 oz coconut water

Pitaya Bowl Topping

  • ¼ cup granola
  • ¼ of a banana cut into slices
  • Handful of blackberries & raspberries
  • 2 strawberries pitted and sliced

Instructions

  1. Combine all pitaya bowl base ingredients in a blender
  2. Blend on Puree for 20 – 30 seconds. Add more liquid if needed.
  3. Pour into a bowl
  4. Sprinkle on granola and top with fruit
  5. Enjoy!
